I am new to the Ajijic area and I too have always had trouble with coming up with a meal plan everyday.  I have found it quite challenging trying to become accustomed to Mexican dishes, and learning how to cook them.  I have lived in many coutries, and I try to immerse myself in each culture.  Live how they live, eat how they eat.  I have always loved Mexican food, but when I moved to Mexico I realized, it wasn&#039;t Mexican food I loved all of these years, it was &quot;Mexican food&quot;.  The food they serve you in &quot;Mexican&quot; restaurants all over the US.  As good as it is, it isn&#039;t Mexican.  I have found that the true Mexican taco is much fresher, healthier, and lighter than what you will find in American restaurants.  Much tastier too!  
I predict that with a little more time, and practice I will be enviting everyone over for tacos, enchiladas, and burritos!</description>
